I don’t k pen would call this a “butchers knife”. This is more of a miniature cleaver. It’s not large and heavy enough to chop through a joint nor thin and flexible enough to butcher a primal into cuts and chops. But it’s a good kitchen knife. In fairness I use a Chinese style “chef knife” which is a bit more cleaver like than the traditional triangular chef’s knife when I’m cutting veggies and even meats when I want chunks. So my thoughts on this are based on that.The knife has a full tang meaning the metal extends the length of the handle. That handle is durable Pakkawood scales attached to the metal. The blade itself is about 6” long. The top half has a texture on it that looks super rough while the bottom is smooth, the profile is more wedge-like than a western chef knife, which I find makes it easier to cut veggies and chop meat.I do want to talk about the “hammer forged pattern” a moment. I have my doubts it’s actually hammer forged. The line between the pattern and the business end is far too well delineated and I see no evidence of the process along the spine. With a surface this rough I should see some irregularity on the spine. There is also the contrast shown in the images. That’s not a thing. The entire blade is polished. Some of that color contrast would have really set the pattern off.The blade is mildly bowed. This allows for rocking when slicing and puts more force into a point when chopping. It works quite well for a compact kitchen knife. If it is actually carbon steel, make sure you dry it and give it a coat of oil regularly to prevent oxidation.Oh, and take that silly leather string off. You don’t want a porous material on your kitchen knife. Ew. All the things I mentioned are minor and nitpicking from a guy who has been in kitchens too much. For a home cook this is a great knife. For me it still has use and will find its way into my block.
